Thanks-Giving Blog Challenge, Day #21

Today I am thankful for apple butter.

Warm, fresh, homemade apple butter.

My house smells fabulous!

Chunky Sweet Spiced Apple Butter
4 cups (about 1 1/4 pounds) peeled, chopped Granny Smith apples
3/4 cup packed dark brown sugar
2 tablespoons balsamic vinegar
1/4 cup butter, divided
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 1/2 teaspoons vanilla

Combine apples, sugar, vinegar, 2 tablespoons butter, cinnamon, salt, and cloves in crock pot. Cover, cook on LOW for 8 hours. Stir in remaining 2 tablespoons butter and vanilla. Cool completely. Makes 2 cups.

This is my first attempt at a blog challenge, something you might see friends doing on Facebook - "__ days of Giving Thanks." I thought this was a very fitting challenge to get myself back into a regular habit of blogging again. Feel free to join me, and post your own blog link in the comments below, so we can keep up with each other! Follow others that are participating HERE.
